Feed four for £5 - how to cook a Greek tray bake

Greek tray bake

Ingredients:

  • One bag of potatoes
  • Onions
  • Courgettes
  • Punnet of cherry tomatoes
  • Feta cheese
  • Seasoning and from the store cupboard: oil, seasoning, garlic and spices of your choice

Method:

  • Make sure your areas are clean and tidy and wash your hands before you start
  • Peel the potatoes and cut into wedges. Place in a pan with a pinch of salt and boil for five minutes. The potatoes should not be fully cooked, but soft and holding their shape
  • Preheat the oven to 180 degrees Celsius
  • Peel and slice the onions. Remember to leave the core on the onion to minimise the effect of your eyes watering
  • Peel and slice the garlic (dried, fresh or pre prepared garlic prepared will work)
  • Put a few tablespoons of vegetable or sunflower oil in a pan
  • Add the part cooked potato wedges and colour on both sides
  • Add the sliced onions
  • Slice the courgette into one centimetre rounds and add to an oiled baking tray or oven proof dish (you can use baking paper on the base of the tray to save effort when washing up)
  • Place the cooked potato and onion mix on top of the sliced courgettes
  • Add the seasoning of your choice: salt, pepper, chilli, garlic, any spices (thyme, oregano or mint would work well). Ensure everything is coated in the oil and seasoning
  • Place the tray/dish into the pre heated oven and cook for 10 minutes or until the potatoes are fully cooked and a golden colour
  • Add the cherry tomatoes (washed) to the dish. You can return the tray with the tomatoes to the oven for five minutes if you would prefer them hot rather than cold
  • Crumble feta over the top and serve. Feel free to add olives, fresh herbs and drizzle with olive oil before serving
